Did you know amazake, or sweet sake, could be added to light-colored soy sauce? Amazake is said to prevent a sharp taste associated with higher salt content due to the short fermentation time of light-colored soy sauce. One soy sauce brewery says, “rice koji with a sweet flavor and sugar properties supplements light-colored soy sauce to make it milder in taste. It helps produce a rich aroma and powerful flavor, unique to light-colored soy sauce.”
